This easy, healthy egg wrap is perfect for breakfast, serve with fresh bread and any beverage of choice. This recipe makes 2 large egg wraps or 4 medium wraps.
You can add any kind of fillings to yours, shredded or minced chicken, seafood…e.t.c. If you are vegetarian or you want it healthier, you can skip the sausage and ham and use vegetables like lettuce and cabbage.
RECIPE FOR THE EGGS
The eggs are basically an omelette.
Step 1. Break the eggs into a bowl, season with salt and pepper or any seasoning of choice. Beat the eggs thoroughly.
Step 2. Add oil to a good nonstick pan, heat up, pour in half of the eggs, spread it around the pan and fry the eggs until done. The eggs should be a nice yellowish colour after frying. Don’t over fry the eggs until you start seeing brown spots. If you over fry the eggs, they might break off when you try to wrap them and won’t wrap easily. You want the eggs to be nice, soft and fluffy for easy wrapping. The eggs aren’t supposed to break off when you eventually wrap them.
Set the fried egg in a warm area like a preheated oven so it won’t get cold.
Step 3. Pour in the remaining half of the eggs and fry until done. Set aside in a warm area.
***The quantity of eggs you fry at a time depends on how large you want the wraps to be. You can fry the eggs in batches, for medium wraps for instance, break 2 eggs into a bowl, beat, season, fry. and set aside Break another 2 eggs and repeat. Or you can do 3 eggs at a time for large wraps.
EGG WRAP FILLING
Step 1. Chop the sausage and ham into smaller bits, fry until done or if yours is precooked, just heat up.
Step 2. Thinly slice the onions (preferably sliced and not chopped). I caramelized my onions but you can fry as usual. To caramelize, just add oil or a few tablespoons of butter(i used butter) to a pan, heat up, add in the onions and fry on medium to low heat until they have slightly browned or well browned. The onions shouldn’t burn at all. Supplement with more butter or a few tablespoons of water if you find the liquid in the pan drying up before the onions are done caramelizing. Set the onions aside.
Step 3. Fry the chopped or sliced tomatoes for a few seconds to a minute and set aside.
PREPARE THE EGG WRAP
Step 1. Get your fried eggs, put it in a flat plate, place any quantity of the sausage, ham, tomatoes, onions and avocado at the center of the egg, sprinkle with a little ground pepper (optional), and wrap until it is tightly closed. The wrap should stay by itself without it breaking off but you can use a toothpick to hold it together to make it easier to eat without it spilling.
Do this until you have exhausted the filling and made all your wraps.
Done. Your egg wraps are ready to serve. Eat alone or serve with bread.
