How to make Fried Yam with Palm Oil Sauce
1. Chop the yams, wash and season with salt, curry powder and chili powder. Set aside.
2. Chop the peppers and onions, in a pot, and depending on the quantity you are making, add at least 1 cooking spoons of palm oil and let it heat. When it is hot, add the chopped peppers, onions, stir and let it saute for about 2 minutes, then add the ground crayfish, salt, seasoning cube, a teaspoon of cameroon pepper and chili powder. Stir and keep stirring under medium to low heat so the sauce doesn’t burn. Cook for about 1o to 15 minutes, your palm oil sauce is ready.
3. While the palm oil sauce is cooking, add vegetable oil to a pan, heat and fry the yams until done.
Your fried yam with palm oil sauce is ready.
After the fried yam is done, I like to drain the oil completely off the fried yam then add the fried yams to the palm oil sauce, stir all together and let it cook for about 2 minutes. But you can skip this and just use the sauce as a dip instead.
