- All Purpose Flour2 Cups

Step 1. Add the flour to a bowl, add the nutmeg, salt, sugar, chilli powder, white pepper and yeast. Mix all together.
Step 2. Add in the warm water and mix until you get a soft and sticky batter, with a thick consistency. See 3rd picture above for what it looks like.
***It is important not to use cold water or hot water as it may tamper with or kill the yeast and your batter won’t rise.
Step 3. Cover the bowl with a plastic wrap or a clean cloth and leave the batter to rise in a warm area for at least an hour. You can leave it for longer but if your yeast is good, the batter should double in size after an hour.
Step 4. Once the batter has doubled in size, beat down the batter to release any air bubbles.
Step 5. Add in the chopped onions and pepper to the batter and stir.
***If you happen to taste your batter and it tastes a bit hot, don’t worry. After frying the puff puff, all the spiciness will blend in and it won’t taste as peppery as the raw batter.
Step 6. Add vegetable oil to a deep fry pan or pot, heat up on medium heat until hot.
***Not too hot so the puff puff doesn’t brown immediately with uncooked insides. Also be sure to add enough vegetable oil into the pot, at least 2 to 3 inches deep. If you don’t add enough oil, your puff puff may turn out flat instead of round.
Step 7. Using your hands, scoop up some of the batter, make a fist and drop the batter vertically into the oil. Do this repeatedly until you have put in enough batter into the oil. But don’t overcrowd the pot.
Step 8. Fry the puff puff until they have browned. Total frying time should be at least 3 to 4 minutes. If your puff puff browned within a minute, then it means the oil is too hot and you most likely have uncooked insides. If this happens, switch off the burner and let the oil cool a little before putting in a new batch.
Step 9. Fry until you have exhausted the batter. Before you put in a new batch, you can switch off the burner and let the oil cool for a few minutes, then add in a new batch on medium heat.
Done. Your Spicy Puff Puff with pepper and onions is ready. Let it cool and serve with any beverage of choice.
