Step 1. Boil the eggs for about 8 to 10 minutes. Then peel the eggs and set aside. Cooking time of the eggs depends on how you like your eggs; with runny yolks, soft boiled or hard boiled. This cooking time is for hard boiled.
Step 2. Remove the casing around the sausage if any, then add all the spices and seasoning; salt, garlic powder, white pepper, paprika, rosemary and nutmeg to the ground meat and mix together.
Step 3. Add the flour to a bowl, add the bread crumbs to another bowl. In another bowl, break two eggs, add a pinch of salt and pepper and beat thoroughly (you can add 1 tablespoon of milk or water to the egg).
Step 4. Take a quantity of the sausage into your hands, flatten it, then place one egg at the center, then carefully and completely mould and close the meat around the egg until the meat has covered every part of the egg.
Step 5. Coat the sausage wrapped egg with the flour, then dip into the eggs and then finally coat with the breadcrumbs. See 3rd picture for what it looks like.
Repeat until you have wrapped all your eggs with the sausage.
Step 6. Add enough oil for deep frying to a pan, heat up, add in the scotch eggs, taking care not to over crowd the pan, then fry for about 4 minutes before turning the eggs so the other side will cook. Total frying time should be between 6 to 8 minutes.
***Be sure to not let the oil get too hot so the outsides won’t cook too fast, brown immediately and leave the insides uncooked.
Repeat until you have fried all the eggs.
Done. Serve with any beverage of choice.
