Step 1. Wash the rice thoroughly, add it to a pot, add water and parboil for about 10 minutes.
Step 2. Drain the water off the rice, add about 3 cups of chicken stock to the pot, add the rice, turmeric and curry powder, stir and season with salt to taste then boil the rice until done. Note that when you first put in the turmeric and curry powder, the rice won’t be yellow but when the rice is cooked, the rice turns completely yellow.
Step 3. While the rice is cooking, chop the onions, bell peppers, carrots. If you haven’t already and if you will be using, add eggs to a bowl, season with salt and ground pepper then fry the eggs.
Step 4. Add vegetable oil to a pot, heat up, add the onions, saute for about 2 minutes or until translucent then add the rest of the vegetables (bell pepper and carrots).
Step 5. Stir-fry for about 2 minutes, then season with salt and bouillon / seasoning cube, thyme, paprika (or chilli powder) and 1/2 teaspoon of curry powder.
Step 6. Stir-fry for another 1 minute. The vegetables should retain their crunch at the end so don’t cook for too long so they don’t get soft. Add the cooked rice and fried eggs.
Step 7. Stir until rice and vegetables is combined, then on medium to low heat let it simmer for about 2 to 3 minutes maximum.
Done. Your Turmeric Fried Rice is ready.
To get chicken stock and for the purpose of this recipe, add chicken to a pot, season with salt and chicken bouillon / seasoning cubes, a little onions, curry powder, thyme and chilli powder and boil chicken until done. Remove the stock from chicken.
You can make this plain without the vegetables and end it at step 2. Just add the parboiled rice to the pot, add the chicken stock, add turmeric, curry powder, salt and chicken bouillon / seasoning cubes to taste, paprika or chilli powder, add a little onions if you want, then boil the rice until done. Serve with any kind of sauce or stew; Goat Meat Sauce, Chicken Sauce or Beef Sauce.
